Thank goodness it is Friday! I cannot wait until 8:30 p.m. when I have finished my first midterm of the year! It’s calculus so think positive math-y thoughts this evening for me! Despite this week flying by since I’ve been absorbed in studying course material, I’ve managed to participate in some extracurricular activities and better my relationship with my floor mates. Meditation

Western Student Services offers workshops to promote healthy living so I took advantage of their drop-in mindfulness meditation class yesterday morning. It surprised me that I was the only female student (The instructor was female) that attended. We did 3 ten-minute tapes (Jon Kabat Zinn), one that focused on awareness of breath, one that focused on awareness of external noise, and one that focused on awareness of body as a whole. I personally prefer to lay down but it was meant to be a sitting session. What I took from it is that unwelcome thoughts will inevitably work their way into your mind. Rather than becoming frustrated or trying to control your thinking, acknowledge your worries and let them go until a later time when you can figure out their deeper meaning.1370293_347525055383279_1680521912_n

Study Session

I’ve always thought that I studied better individually but this week I was finding my concentration to be off in my room or in the library so I decided to study with a friend in our floor’s study room! I was reminded how beneficial it is to talk out loud about what you are learning or how a solution is reinforced if you teach a friend your method. Our RA also held a discussion where we talked about study tips, which offered suggestions for calming anxiety and staying on top of course material before and during the exam.1374700_347525052049946_1663818256_n

Mail

I’ve said it before but I’ll say it again, I love getting mail! This week my mom sent me a card with some stickers and a friend, Laura, sent me a homemade postcard. Simple gestures, or random acts of kindness, can really make a difference in your day! I found them to be extremely uplifting.1372919_347525042049947_1277531894_n

Gym

As if the 5 flights of stairs in my residence isn’t enough, I’ve been going to the gym about 4 times a week! I’m realizing how much more I enjoy weight lifting and strength training as opposed to cardiovascular activity. I typically do a 15-minute elliptical warm up followed by a Pilates or a Sweat and Sculpt class. If not, then I stick to a 20-30 minute elliptical session followed by some weight machines, a 5 minute plank and some other abdominal exercises.1371470_347525045383280_1660948070_n

Quizzes

I’ve officially completed two chemistry quizzes and tonight I’ll have also finished one calculus midterm. Test taking has always been anxiety provoking but I’ve felt surprisingly calm these past few days. With the help of my sister’s advice, I’m learning to set small attainable goals and move on when I complete them. I find that over studying can actually confuse me to a point where my confidence lowers.1379167_347525038716614_1541801768_n

Fun with Fitness Friday

It has been a while since I posted about fitness. At the beginning of the summer I began swimming 4km of lengths most mornings but by mid-August my exercise regime was more or less non-existent as I was staying active in my everyday life and didn’t prioritize time for fitness. I’m not about to say that my leisurely swims in my backyard or nighttime walks were a replacement for the gym, but they were good enough for my standards. Just by looking at me you can easily tell I am not the gym type as dresses are skirts aren’t exactly athletic attire. In fact, the high membership prices and competitive natured individuals used to intimidate me out of even joining a club.1236506_341717389297379_1768538522_n 1305438_341709929298125_1728167817_n

Of course all of this changed when I  came to Western because within my tuition fees I was provided with access to aerobic classes, athletic courts, and a full range of equipment at the Mustang Recreational Centre on campus. The gym has offers televisions for entertainment but because it is a new facility it has floor to ceiling windows which is where I prefer to workout because the morning sunrise is much more motivating! Coincidentally my first week back I was also invited to be a SweatPink ambassador. I could not have asked for more perfect timing since I was already trying to incorporate a fitness component into 4-5 days per week. This was added incentive to stay committed. For those of you who do not know, SweatPink is a  movement, where tough and girly come together. Sweat Pink™ is all about sharing the joy that comes from living a healthy lifestyle. It’s a celebration of hard work and well-earned rewards. Our pink shoelaces are a proud demonstration of all we’ve achieved, and all we plan to become.

Although I have difficulty falling asleep, my body naturally awakens by 6:30 a.m.. Unfortunately at this time it is still in it’s “groggy” phase so exercising is the perfect way to get myself going. I am already noticing a positive correlation between productivity, mood and exercising in the morning. It feels good to be done a workout at 8:00 a.m. and it allows me to have minimal wait time for machines since not many students enjoy working out before class. I can’t even begin to explain how many machines Western has, from a rotating rock climbing wall to circulating ladders, rowing machines to stationary bikes, free weights, exercise bands, medicine balls, yoga mats and just about a machine to work every muscle in your body. It helps that the machines are well labelled with instructions as to which part of my body the machine targets and how to use the machine properly! I tried the manual treadmill for the first time which was neat (and hard) but my favourite remains the elliptical. I’ve also been enjoying the fitness classes my favourites being Spin, Sweat and Sculpt and Pilates. I find it motivating being around instructors especially when I am unfamiliar with certain movements. I never knew just how tough Pilates was but boy is it relaxing and fun! I know everyone has different outlooks on fitness, mine being everything in moderation, so I know that how I sweat might be extremely different from your preferences. If I am doing strength components I prefer to target upper and lower body on different days so that I am not working the same muscles two days in a row. If I do a high-intensity cardio class one day (Spin), I usually do a slower pace workout the following day (Pilates). I’m definitely not aspiring to be the next body builder or marathon runner, so I have learned to set attainable goals so that I feel accomplished when I achieve them. There is no sense in asking myself to run on the treadmill for 1 hour when recently I have only been doing 30 minutes. It feels much better to end on a good note than to push my body past it’s limits leaving me dreading returning the following day. I find that if I overwhelm myself or tire my body out too much, I am less likely to enjoy myself so I start seeing exercise as a chore versus self-care. After all that is really why I exercise. I don’t run so I can eat cake because I can (and will) eat cake even if I don’t run.  Of course my physique and appearance is somewhat important but exercising gives me time to step back and assess where I am in terms of my values of life. It allows me to do something for myself and I don’t feel guilty taking a break from studying because exercising is just a different form of productivity.1241276_341709922631459_1059657912_n 380290_10150833258448428_1958867863_n

Gyms can be intimidating because there are unconscious comparisons. We’ve all run beside someone who feels the need to consistently be at an increase of 0.1 in their speed, incline or time than you just so that they can be “better”. I’ve had unwanted advice from individuals who believed their tactics were more efficient than mine. Especially for females, gyms can be a place where one feels inadequate or worries others are watching their every move.  I’m learning that everyone is so invested in their own regime that they aren’t paying attention to your form and if they do happen to feel the desire to workout longer, faster or harder than you than that is a reflection of their own self-consciousness. I don’t compare myself to others because I do not know what they did before they came to the gym or what they will do after when they leave. It’s all about finding what is right for my body and being satisfied at the end of your workout. Rest days are said to be equally important for your body to repair and I find it gives me time to rejuvenate. I’ve never been interested in sports nutrition but I am starting to dabble into some readings so that I can perform my best during my sweat sessions.

All round I have really enjoyed my exercise regime and I hope I can keep it up throughout the year.  I have downloaded a Western iPhone app that reminds me of the gym hours, fitness classes, pool lengths,  intramural or sports games, and neat events that are happening on a daily basis such as free health seminars. The variety of classes offered or different machines available should help to prevent me from getting bored! What is your favourite form of exercising? Myrtle Beach: Final Recap

Myrtle Beach’s warm temperatures and abundant sunshine left me spending most of my days by the pool or on the shore. No need to stay indoors since the weather cooperated leaving us without a drop of rain. Clearly we picked the week well because other vacationers complained that the days leading up to our arrival were dark and dreary.111111111 1333 133333

We stayed at the Sea Watch Plantation Resort located on a private beach with very friendly (and attractive) lifeguards. Our balcony overlooked the ocean so we frequently saw fireworks at nighttime. The resort was neither busy nor noisy, so I often fell asleep while reading in a reclined chair by the pool. I guess that is the advantage of traveling when summer holidays have ended for most Americans. 14 62

While I enjoyed lounging in the heat, my fair skin can only take so much sunshine so I did enjoy endless shopping, delicious dining, and plenty of tourist attractions. Some of my favourite activities included seeing salt water taffy being made, product surfing in Kroger and Lowe’s, go-karting, jet skiing, beachwalks by the pier, seashell hunting and of course card playing. I’d recommend stopping in at Barefoot Landing which had chain stores and one-of-a kind boutiques. I really enjoyed the “Natural Life” paper products at Ron Jon Surf Shop and the jewelery at Francesca’s. If you are looking for an afternoon adventure, try visiting Broadway at the Beach which is a combination of gift shops, eateries and kid-friendly activities such as Ripley’s Aquarium, Planet Hollywood, WonderWorks, MagiQuest and even Dragon’s Lair Mini-Golf. I really enjoyed “It’s Sugar” which was a candy shop with oversized Wonka products and a large assortment of gummies, M&Ms, jelly bellies, soda (I called it pop by accident) and other sweets. e2wwew 12212121212

The most entertaining piece of the trip was Pirate’s Voyage. The dinner show, sponsored by Dolly Parton, featured a combination of acrobatics, acting, singing, dancing and even performing animals such as dogs, sea lions and parrots. They did a great job rewarding and treating the animals with respect, which to me is very important. If you can get over drinking soup out of a cup or eating a quarter chicken with no knife, then you will really enjoy the show. I would definitely recommend Myrtle Beach as a family vacation location, however if I returned to the Carolinas I might visit Charleston, South Carolina or Outer Banks, North Carolina instead. While the resort we stayed in was clean and updated, parts of North Myrtle Beach were a bit run down by tacky tourist shops. You know something is fishy when seafood buffets are only $6.99 for all you can eat. Overall I really enjoyed myself. Nearing the end I did miss my own bed and my family, but for the most part the time flew by and I was sad to say goodbye to the coast. I am so grateful to have been included in Caitlin’s family’s annual trip. I couldn’t have asked for a more welcoming group of people, although I did get laughed at for all of my food shots and selfies.

I feel behind in blog posts and blog reading but it was nice to take a break from texting and facebook. I had many firsts for instance being stung by a jelly fish, seeing a pelican in flight, finding a lettered olive (South Carolina’s State seashell) and successfully running 2 miles on the beach without stopping. As I said before, there really is something for everyone whether that be golfing, playing tennis, riding the skywheel, visiting the theatre, or investing in some new clothes. It is an affordable destination and there really never was a dull moment. ♥ Molly

Warm Potato Salad

My family knows how to cook potatoes well which doesn’t surprise me since this humble vegetable is very versatile. My grandmother is known for her amazing mashed sweet potatoes (which really only shares the same name, since it’s a root vegetable not a nightshade), my nana has a great scalloped potato recipe, my dad can make melt in your mouth twice-baked potatoes and my mom sure knows how to toss a warm potato salad. While I don’t love potatoes in any form, the preceding dishes are far too tasty to pass up. The heavy consistency of potatoes leaves me feeling almost too full which is perfect when I need extra comforting. IMG_6845

It’s been rather chilly (okay, cold for my liking and for it being Summer) this past week which has left me craving warmer foods so I couldn’t have been happier when my mom suggested making her warm potato salad. I’ve been feeling a bit under the weather and an extra helping of carbohydrates was exactly what I needed, or so I’m choosing to believe. Besides, potatoes are technically vegetables it’s just that their high content of starch makes them taste more like rice or pasta, not that there is anything wrong with eating copious amounts of carbohydrates.IMG_6849

I couldn’t let my mom have all of the fun in the kitchen though, so I offered to help which ended up consisting of a lot of picture taking with a tiny bit of chopping. Whoops. Just a forewarning, this salad tastes much better than it presents! Regardless, here’s the recipe we came up with based on a very tattered and torn recipe from Canadian Living back 1992 (the year before I was born). It is an excellent source of fibre and iron and even contains a fair bit of protein. What’s your favourite way to cook potatoes? Warm Potato Salad

Serves 6 as a Main Course, GenerouslyIMG_6832

Salad 

  • 2 lb red potatoes, quartered
  • ½ lb green beans, halved (3 large handfuls)
  • 4 green onions, chopped
  • 3 celery stalks, chopped
  • 1 red bell pepper, chopped
  • 2 cans tuna packed in water, drained and chunked (368 g)

Dressing 

  • 2 tbsp. white wine vinegar
  • 1 tbsp. apple cider vinegar
  • 2 tbsp water
  • 1 tbsp Dijon mustard
  • 2 tbsp garlic, minced
  • 3 tsp olive oil
  • Pinch of ground black pepper, to taste
  1. In a small measuring cup, whisk together white wine vinegar, apple cider vinegar, water, Dijon mustard, garlic, olive oil and black pepper. Let dressing sit for 10 minutes to allow flavours to intensify and combine.IMG_6814
  2. Bring 4 cups of water to a boil in a large pot. Add potatoes and simmer on medium high for 5 minutes or under potatoes are almost tender. Add green beans and continue to boil for 3 minutes or until beans and potatoes are fully cooked. Drain water and transfer potatoes and beans to a serving bowl.IMG_6807
  3. Drizzle dressing and toss in chopped green onions, celery and red pepper. Carefully mix in tuna trying not to break up chunks or mash the potatoes.IMG_6820

Fresh Rolls

Thai food tends to be cooked with spices and nuts, neither of which I can have. Spices upset my stomach and leave my tongue on fire while nuts are an allergy I grew into in fourth grade.

Of course the foodie in me doesn’t let Thai-peanut sauce stand in the way of me enjoying this type of cuisine. My dad makes a great homemade Pad Thai sauce and I love preparing Fresh Rolls. I find the crunchiness of the uncooked vegetable rolls much more refreshing than fried Spring Rolls don’t you? Which brings me to today’s post. Don’t hold your breath on a formal recipe because I truly believe Fresh Rolls can be taken in so many directions. While I usually use shrimp as my protein source, my dad prefers chicken and I’ve seen people roll salmon in as well! If I could, I’d probably throw in crushed peanuts or an almond-butter sauce for additional flavour. Since the rice paper never really expires making these rolls is usually a “last minute” decision so I tend to use whichever vegetables I already have on hand. A must-include is definitely Avocado! Regardless of the ingredients you decide to roll up, there is a basic formula for the preparation. I’ve also included an easy sweet and spicy thai-dipping sauce recipe. Sorry the pictures aren’t prettier – These rolls aren’t exactly fast to make (in the volume I needed) and dinner time was fast approaching so I I couldn’t set up a huge photoshoot. I hope you enjoy. Suggested Ingredients

  • Rice Paper (Circular Wrappers)
  • Fresh Vegetables: Carrots, Red Pepper, Cucumber, Onion, Lettuce
  • Fresh Fruit: Avocado, Mango

Sweet-Thai Dipping Sauce Ingredients

  • ¼ cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp apple cider vinegar
  • ½ tsp chili sauce
  • 1 garlic clove, minced
  • ½ tsp fresh ginger, diced
  • 2 tsp honey (Optional)
  1. Prepare all of your fillings to your liking. You can choose to slice, dice, sliver, shred, mash or grate the ingredients for inside of your rolls. I chose to use matchstick carrots and I also sliced avocado, mango, red pepper, cucumber and spinach. For protein I used whole mini shrimp and chicken breast slivers. Mint, basil, cilantro, and pre-made (chilled) rice vermicelli are also great fillers.IMG_6190
  2. Fill a large bowl or flan dish with boiling water. Carefully dip one rice paper into the warm water for about 30 seconds or until softened. Lay rice paper flat onto a clean cloth.IMG_6195
  3. In a row across the centre of the rice paper, leaving an inch at the top and bottom, place a combination of “filler” ingredients. Fold in the top and bottom. Fold one uncovered side (left or right) inward and then tightly roll the rice paper. Repeat with the remaining ingredients and rice wrappers.IMG_6201 IMG_6202 IMG_6203 IMG_6204
  4. Prepare dipping sauce by whisking together soy sauce, rice vinegar, apple cider vinegar,  chili sauce, freshly minced garlic clove and diced  ginger. For sweetness, add in up to 2 tsp of honey.
  5. Serve Fresh Rolls with dipping sauce and chopsticks.IMG_6216

Summer Solstice

Yesterday marked the first official day of summer. Hooray! I can’t say I enjoy any other season more than this one. Here in Ontario, Canada the rhyme  “April Showers” came true for the entire spring season. While May brought flowers, it also brought torrential downpours. I am hoping that summer brings warmth and sunshine so that those threatening clouds get the memo to head elsewhere. (I am thinking positive thoughts for those currently struggling in Alberta that search to find dry land and  escape the flooding.)

I love summer for so many reasons. It tends to be the warmest season, the days are longer, it’s the perfect time for summer “reads”, clothing prints are always brighter and the materials are lighter (Hello Summer Dresses), my birthday falls within it, bike rides are more enjoyable, popsicles become more popular, as a student I get it off from school and it is typically the month in which my family travels. My parents must have had a hectic job coordinating summer day trips and weeklong vacations when I was younger. As one of four, not only were vacations expensive but very busy! I have fond memories of driving to the east coast, visiting Montreal and touring Ottawa. As I have gotten older however, we’ve caught the “Travel bug” and have gotten out of Canada more often! I’m fortunate to have ventured through California, gone to New York City, and have even seen a fair bit of Europe. Last summer we spent a few days in Paris France before heading to the South of France where we rented a house. It was the perfect opportunity to experience french living and culture.

I wonder what is in store this summer!  My hope is for a sandy beach covered in seashells, warm water for swimming and interesting boutiques. I think I’ve had my fair share of museums and site seeing these past summers, so my wish is to go to a relaxing location with minimal walking. Lazy? Maybe! Peaceful? Definitely! To be truthful I don’t know if I am the type of person that can read by the ocean but I am definitely willing to test my patience and try! Someday I hope to stay in a resort in Hawaii so in the meantime I will have to work on lounging by a pool (coated in SPF 50 sunscreen of course).

Of course the first day of summer wouldn’t be complete if we didn’t swim in our pool! Yesterday was also special as it was Lottie’s first time swimming. She was so brave and loved the water. I think it reminded her of a big bathtub. She is already following in my footsteps and becoming quite the water fish. Summertime is just asking for memories to be created. ♥ Molly

Friday Fitness

Even as a child, I loved to swim. My brother and I would race to see who could be the first one in the water and of course the last one out. (We thrived on competition!) I have fond memories of visiting my grandparents in the summertime as they had a pool. I don’t think it was heated much, but I didn’t mind. While the adults conversed on the deck eating cherries, crackers and pâté, the kids would become shriveled up raisins. My siblings and I would dive to get rocks, pretend we were lifeguards, talk under water and help each other float. Remember that game Colours? We were all over it! Our imaginations would run wild as we called out shapes and foods (Such as spaghetti and meatballs) for someone to reenact as they jumped into the pool. Noodles, Floating devices and goggles were part of the drill.

Over the years my swimming has been less about games and more about fitness. I never would have realized how great it can be for your physique. Swimming firms almost every muscle in your body without straining your joints. The water neutralizes gravity making humans virtually weightless, again minimizing any potential stress on your joints.

While lifejackets and water wings aren’t part of the drill anymore, I still have my favourite gear. Goggles make it possible for me to swim in a lane without running into anyone else. My H20 Audio device is a recent purchase, but one that I truly value. It’s neat to be motivated by music while you are underwater. Not only do swimming caps keep your hair from absorbing chlorine but they also reduce resistance created when hair drags against the water. Of course you can’t swim without a bathingsuit. My favourite one that I currently own was created by Speedo. At the recreational centre that I belong to, we are allowed to bring water bottles to the edge of the pool. My Camelback allows me to stay hydrated and gives me a valuable excuse to take a break! Lastly, I use a pool buoy when I am focusing on working my arms, a flutter board when I am improving my kicks and flippers when I am trying to increase my speed. I am fortunate to be able to borrow the last three items from the centre but you can find them for reasonable prices at your average sport store.

I usually try to swim for about an hour to an hour and a half. Here is a sample of what one of my workouts might look like.

Swimming

While I am no expert, I am definitely enjoying the learning process of swimming. I find that I swim alongside a lot of trained athletes and personal coaches. They are always willing to give me suggestions and feedback. I am also considering purchasing a book to spark some new training ideas. Given that I only completed swimming lessons until I was in Level 4 or 5, I think I am doing all right. Maybe one day I will learn to do the dolphin kick.

For my body, swimming is definitely a “no pain, plenty of gain” type of workout. It is a place where I can “Sweat” without actually “Sweating”. I am hoping to be swimming (and tanning with sunscreen) in my own pool soon, when the weather finally heats up. A streak with “no rain” would be nice don’t you think? That’s all for now.
